I learned about the proper care of my cast iron cooker, as well as how to restore pieces I am looking for. I am looking forward to trying some of the recipes as soon as our Arizona record heat goes down and I start cooking with the oven again.

Not all cookbooks that claim to contain southern cooking recipes can pass the experience of those of us who have eaten southern cuisine all of our lives. The first recipe I look for in a cookbook that claims to be southern is the recipe for cornbread. I consider the cornbread recipe to be the litmus test of any book claiming to be southern. The Southern Cast Iron Cookbook passed the test with flying colors. No true southern cook would ever include flour in any quantity (no matter how small) in their recipe for cornbread. And buttermilk is the only liquid to use. If you are looking for an authentic southern cookbook this is the one for you.
