The 30 Minute Low Carb Cookbook by Pamela Ellgen is a cookbook for those who want to eat a low carb diet for their health or otherwise.100 simple and easy to make recipes in a variety of categories. There are recipes for Breakfast and Brunch, Snacks, Salads and Sides, Chicken, Pork, Beef and Lamb, Seafood, Vegetarian and Desserts.
For each recipe there are cooking, ingredient, variation, what to do with leftovers etc. I looked at the recipes and I did find quite a few recipes that I flagged and will be making. Chicken Provencal, Chicken with Port, Mushrooms and Cream and Roasted Pork Tenderloin with Apple Cabbage Slaw. Sound good? I thought so too.
What I also liked about the cookbook is that each recipe has a list of total carbs, net carbs and calories. There is also a list of kitchen tools plus the 10 ingredients that you should have on hand for your pantry. Each recipe also tells the reader whether the recipe is Dairy-free, gluten-free, nut free, soy free or vegan.
This cookbook should be on your shelf, I plan on making a few of the recipes in the next week or so. I just wish there were more pics of the finished recipe. I do like the book and it will be one I will use for sure. I need to watch my carbs and I am excited to try the recipes.
I sat up through the nighttime hours, kindle in one hand… pen and paper in the other … and making a list of recipes I wanted to try. It dawned on me, I was listing them all.
Not only do the 100 recipes sound delicious, they all can be prepared in less than half an hour. I love to cook, but I don’t necessarily want to slave away in the kitchen for hours preparing a meal.
They all are easy, with step by step instructions. Ingredients are common and so easily available at your favorite grocery store. The author has added her comments, as well as listing all the nutritional values for each recipe.
A few of my favorites …. and which I will be trying over the next few days … Green Chile Scramble (breakfast) …. Green Beans with Lemon and Mint ……… Pan-Fried Chicken …. Different Pizzas with some yummy ingredients ….Roasted Pork Tenderloin with Apple Cabbage Slaw. Let’s face it … I want to try them all!

I’m a big fan of low-carb diets. There are so many selections of food you can have on the diet… you never go hungry ……. and the weight comes off. It’s a diet that is highly sustainable for any length of time.
