I love my instant pot, so I was so excited to see a vegetarian version available by Urvashi Pitre! I use my instant pot at least four times a week. It has completely replaced crock pot cooking for my family breakfast, lunch, and dinners!
With that being said, I liked that this book had 100 vegetarian and vegan recipes to try! It offers Mexican, French, Greek, Thai, Indian and so much more. Anybody, even meat eaters, can find recipes to make from this cookbook! The recipes are easy to follow with ingredients that most people would have on hand. The photographs are beautiful and accompany each recipe!! The recipe I tried was Boston Bake Beans and they were very flavorful and liked by my whole family. Even if you are not vegetarian, these recipes would be a great way to add veggie dishes to your menu.
In my opinion, the only thing that was missing from this cookbook to give it five stars was the nutritional breakdown for each recipe. It might not bother everybody, but it’s something I look for in a cookbook. Unfortunately, it is a game changer for me and even though I may continue using the digital version of the cookbook, I will sadly not be buying the hard copy for my cookbook collection.

I love cookbooks…. seriously. I love the idea of eating healthy and right all the time but it rarely happens. So I just bought an instapot… a mini 3qt so after a few uses….wow! So easy and the food is just naturally great. Next step… cookbook that will help me eat better and learn my instapot better. This cookbook was a slam dunk for me.
What did I like? Author pretty much dumbs it down for newbies looking for radical meals in an instapot. This should be titled instapot vegetarian meals for dummies which explains how basic it truly is. Also the author and many of her blog members have repeatedly tried these recipes and you can tell by the huge amounts of PICTURES! Omg…swoon the pictures. Prep time….ingredients….etc…etc. All of it is included. Author also encourages you to step outside your comfort zone to try a lot of these dishes because people all over the world vouch for the authentic taste. For me that’s just a win. I fell in love with the Mexican and black bean dishes included and can’t wait to try them.
Would I recommend or buy? I would buy and recommend…you can’t go wrong with such a simple version and you can always contact the author on her blog for more questions. She might quote herself a lazy cooker but her friendliness between the pages make her seem genuine and helpful.
